First, drain a 15 oz can of crushed pineapple. Save that juice! You'll use it when you make the custard

In a small sauce pan, add 1/2 c sugar and 2 TB flour and mix well

Next add 1/2 cup pineapple juice and one egg

Mix well and add 2 TB butter

Cook this over medium low heat. It will thicken quickly so be sure to keep whisking. Once it thickens, turn heat off and remove

Add one brick of cream cheese into the warm custard

Stir this until the cream cheese is completely incorporated with no lumps.

Ina large bowl..

Add one small container cool whip

Next dump the custard over

Then the drained pineapple

About 2 cups mini marshmallows

And crushed pecans, about 1/3 cup

Mix and it's done!! This is one of my favorite salads we ate with dinner. It's wonderful with savory of my aunt Glenda's favorite dishes she used to make me growing up x

Place in a container and place in fridge until you're ready to eat! Enjoy x
